The Easiest Lasagna

ground beef
mild italian sausage
Tomato paste
jar of sauce (your preferred flavor, brand)
box oven ready lasagna noodles
container ricotta cheese
shredded parmesan
shredded mozzarella
Method
To make The Easiest Lasagna, simply…

Preheat oven to 375 degrees.

In a large pot over high heat, brown the beef and sausage together. Once cooked through, drain any excess fat.

Turn the heat to medium, and add the tomato paste and stir well. Allow this to cook for several minutes; the sugars in the paste will begin to caramelize and give everything a great flavor. Season at this point, if desired (salt, pepper, garlic and onion powder).

Pour in the jar of sauce, cover and turn to a simmer.

In a large bowl, add the ricotta cheese and give it a quick, vigorous stir. Add the parmesan and mozzarella, keeping a handful of the mozzarella for later. I add Italian seasoning to mine, but that is up to you. Optional: add one egg to this mixture to help create a creamy consistency. Mix well.

In a deep 9x13 pan, spread a layer of sauce. Add a layer of noodles, then a layer of cheese mixture. Repeat this three times: sauce, noodles, cheese. Sprinkle that handful of mozzarella you saved earlier over the top.

Note: you will have extra sauce left over! That’s ok. I use it for a small batch of spaghetti or freeze it to use later.

Cover and cook for 25-30 minutes. Uncover and cook another 5-10, until the cheese is bubbly on top. Allow to rest for 15 minutes before serving.

There is a big difference between the food I’d like to cook and the food that I’ll actually cook. I enjoy being in the kitchen, but I don’t have a lot of time to spend there. And let’s get real, I’m not going to multiple stores to grocery shop. I need to keep things quick and easy.
This is a collection of recipes that are in rotation on the dinner menu at my house, with a few that I developed just for this book. I hope that no matter your skill level or how busy you are, you can turn to any page and say, “I can do that!”.
Cooking should be fun, and it doesn’t have to involve hard-to-come-by ingredients. If you cook with love in your heart for the people you care about, it doesn’t matter if it’s from scratch or a can.
