Luv’s Pork and Orzo

Ingredients

Here are the basic ingredients that you will need to make Luv’s Pork and Orzo:
boneless pork chops, cubed
butter
package of orzo pasta
package of Lipton Beefy Onion soup mix
beef stock
cream of mushroom soup
Splash of heavy cream
parmesan cheese

Method

To make Luv’s Pork and Orzo, simply…
1 After cutting your chops into bite size cubes, generously season them with salt and pepper.
2 In a wide pan over medium-high heat, add enough olive oil to cover the bottom of the pan and add a ¼ stick of butter. If your oil begins to smoke, your heat is too high.
3 Add the pork and quickly brown it on a couple of sides. We’re not worried about cooking them all the way through just yet; we only want to get some color on them. Remove from the pan and set aside.
4 Add one cup of beef stock to the pan to deglaze. This should only take a minute. Add the can of cream of mushroom soup and the other two cups of beef stock and stir well to combine. Add the package of Lipton soup mix. Once incorporated and back at a simmer, add the pork back to the pan with the orzo. Cover and allow to cook until the orzo is complete (approximately 10 minutes). Stir occasionally.
5 Once the pasta is done, turn the heat off and add a splash of heavy cream and parmesan cheese, stirring vigorously to combine.

There is a big difference between the food I’d like to cook and the food that I’ll actually cook. I enjoy being in the kitchen, but I don’t have a lot of time to spend there. And let’s get real, I’m not going to multiple stores to grocery shop. I need to keep things quick and easy. This is a collection of recipes that are in rotation on the dinner menu at my house, with a few that I developed just for this book. I hope that no matter your skill level or how busy you are, you can turn to any page and say, “I can do that!”. Cooking should be fun, and it doesn’t have to involve hard-to-come-by ingredients. If you cook with love in your heart for the people you care about, it doesn’t matter if it’s from scratch or a can. Y’all come fix you a plate!
