Chicken Cobbler
Ingredients
Here are the basic ingredients that you will need to make
Chicken Cobbler:
Rotisserie chicken (or 2-3 chicken breasts), shredded
bag of frozen peas and carrots (or your choice of vegetable)
Red Lobster Cheddar Bay biscuit mix
milk
chicken stock
can cream of chicken soup
stick butter
Method
To make Chicken Cobbler, simply…
1
Preheat oven to 350.
2
Place butter in a 9x13 pan and melt in the oven as it preheats. Once melted add chicken and spread out into an even layer. Pour the frozen vegetables over the top. Season any way you like.
3
At this point, you can add shredded cheese if you want.
4
Mix together the milk and biscuit mix along with the seasoning packet that came with it. If preferred, add garlic and onion powder (or any other seasoning you like).
5
Pour the biscuit mix over the chicken and vegetables, and do not mix! Whisk together the stock and cream of chicken soup, and pour over the top. Again, do not mix!
6
Bake uncovered for one hour. It is going to look runny, but let it sit for at least 10-15 minutes. The sauce will thicken to a gravy consistency.

There is a big difference between the food I’d like to cook and the food that I’ll actually cook. I enjoy being in the kitchen, but I don’t have a lot of time to spend there. And let’s get real, I’m not going to multiple stores to grocery shop. I need to keep things quick and easy.
This is a collection of recipes that are in rotation on the dinner menu at my house, with a few that I developed just for this book. I hope that no matter your skill level or how busy you are, you can turn to any page and say, “I can do that!”.
Cooking should be fun, and it doesn’t have to involve hard-to-come-by ingredients. If you cook with love in your heart for the people you care about, it doesn’t matter if it’s from scratch or a can.
Y’all come fix you a plate!
