Poppyseed Chicken Casserole

Ingredients

Here are the basic ingredients that you will need to make Poppyseed Chicken Casserole:
rotisserie chicken (or 2-3 chicken breasts), shredded
container sour cream
can cream of chicken soup
box Ritz crackers
sticks butter
poppy seeds

Method

To make Poppyseed Chicken Casserole, simply…
1 Preheat oven to 350.
2 In a large bowl, mix the sour cream and cream of chicken soup. Add the chicken and set aside.
3 Crush the Ritz crackers and in a bowl, mix the crackers and melted butter. In a 9x13 pan, pour half the cracker mixture and spread evenly. Add all the chicken mixture and top with the remaining crackers.
4 Cover and bake for 15-20 minutes, until bubbly. Uncover and bake another 10-15 minutes, until golden brown.
5 Note: Don’t add the entire container of sour cream and cream of chicken at first; start with half and then work up to the consistency you like.

There is a big difference between the food I’d like to cook and the food that I’ll actually cook. I enjoy being in the kitchen, but I don’t have a lot of time to spend there. And let’s get real, I’m not going to multiple stores to grocery shop. I need to keep things quick and easy. This is a collection of recipes that are in rotation on the dinner menu at my house, with a few that I developed just for this book. I hope that no matter your skill level or how busy you are, you can turn to any page and say, “I can do that!”. Cooking should be fun, and it doesn’t have to involve hard-to-come-by ingredients. If you cook with love in your heart for the people you care about, it doesn’t matter if it’s from scratch or a can. Y’all come fix you a plate!
