Texas Chicken Spaghetti, from scratch
Ingredients
Here are the basic ingredients that you will need to make
Texas Chicken Spaghetti, from scratch:
2lbs Chicken thigh filets, boneless / skinless
2 T extra virgin olive oil
2 T bbq rub (I like Chicks That Smoke or Blazing Star)
Garlic powder
Sea salt
1.5 - 2lbs spaghetti noodles (save 2-3 C starch water)
⅓ C parmesan cheese, powdered
4 T salted butter
1 C mushrooms, diced
1 white onion, diced
6 T all purpose flour (gluten free works too)
1 C milk
1 C chicken broth
1 T minced garlic
1 regular Velveeta &1 Mexican Velveeta (12-16oz each or 24-32oz total)
½ C cilantro, chopped
1 can (10 oz) tomatoes & chilies
8 oz sharp cheddar cheese, grated
Method
To make Texas Chicken Spaghetti, from scratch, simply…

Cube chicken thighs, coat with oil and season with bbq rub.

Over medium-high heat, sear chicken pieces in skillet & set aside. Do not cook thoroughly.

Boil water, season with garlic powder and salt, cook noodles al dente (according to package directions). Drain, but reserve 2-3 C pasta water.

Add pasta to a deep baking dish, coat with olive oil, sprinkle with parmesan cheese & combine.

Using the same skillet as the chicken, add butter, & sauté mushrooms and onions until tender.

Add flour, minced garlic, salt, milk, chicken broth, 1 C pasta water, and Velveeta. Cover & cook on medium-low until melted, stirring occasionally.

Add cheese sauce to noodles and combine well.

Add chicken pieces, cilantro, rotel and 1-2 C pasta water to pasta and incorporate ingredients.

Cover with foil & bake for 45 minutes at 350°.

Uncover, add shredded cheese on top, and broil on high until nicely melted.

Serve with a side salad and garlic bread.
